Knives are out for Northwestern
You can sharpen your own knives all you want, and if this is the kind of thing that you enjoy, well then more power to you. We’ve always lived by the credo, “Let the experts to their job, and stay away from sharp objects and sharpening devices as much as possible.”
The pros at Northwestern Cutlery have been sharpening blades for more than a half-century, so you can safely assume that they know what they are doing.
This is not something you need to do very often if you are a recreational cook, but if you have a set of knives and they have never been professionally sharpened and they are not two weeks old, it is time to get them professionally sharpened (at $3.50 per blade).
This is not a food-snob thing--sharp blades slice through food easily, the way they should; dull blades do nothing but cause injuries.
